You don't mind my asking, what exactly are you drawing from medieval times?
I asked because one of the guests things I started drawing were castles. I'm a hiker, so I paid attention to the way shadows hit rocks or the way the landscape appears.
Shading mostly depends on where the light source is coming from.
With color, that pigments back in those times weren't as they are now.
If you're using paints, maybe invest in a color scheme book to make the colors.

I know that the medieval art style doesn’t have much shading but I think you’re talking more about the artwork of the time, not of the style. I feel like we exaggerate the medieval times a lot. I know there was a high standard of chivalry, but since we believe the knights to disregard that, we seem to see the era as very chaotic. So a lot of art which romanticizes the negative side of medieval I guess has a lot of fire, so maybe use warm colored shading or something which symbolizes chaos, along with a chaotic background
