I’m deciding on what I should get for my bike so I’ll list the top bikes I know of that I like (fyi I’ve never rode on a bike yet and can’t wait)

I'd go with the R3 or Ninja 400 for a first. My factors for this answer are your age, experience, and price/longevity. Beat up on a 3/400 and you can basically get about what you paid for it when you sell or trade it a few years later. Since you don't have experience, you'd want a lighter bike to handle.
I think 600 is okay for new rider although many might not agree; it’s more about respecting the bike for what it can do. However the 400 would be better because you can cut your teeth on it before upgrading to bigger bike. Had I known about the Yamaha R3 when shopping for new bike, I’d have gotten it instead of my R6

Honestly, if you've never rode on a bike, you could start on the Ninja 400. That's what I would want from this. But for a more experienced rider, the CBR600 is the best choice in my opinion.

Is there places that will let you test ride it? In Florida near orange park area?

You might be able to inquire at your local dealerships. Talk to them to know if they have units available for test rides.
