Yellow Diamond is yellow.

I know, it's pretty unbelievable at first, but I promise you, it's really plausible!

And look at this Diamond Authority symbol from Jailbreak. What's green (specifically light green) without white and blue?

There's even a yellow triangle!

2. Her Pearl is Yellow

Look! You can't deny it! Diamonds are too fancy to have off-color Pearls, and Blue Diamond's Pearl was blue!

3. Her Name is YELLOW Diamond

She's obviously Yellow.
