It can be about a character, something minor that you think could of happened in the plot or after the main plot, etc etc. Also for those who don't know, a headcanon is a certain idea you create about something, usually a person or event. The only big rule I guess would be to keep it PG and have fun UwU"

An example for a headcanon is possibly Elder Price and Elder McKinley going on Disneyland.
