I had to link my PS5 to a PC . However, I'm in the hospital starting Wednesday and wanted to play on my Switch. Can I link my to it so I can continue playing on my PS5 ?

You definitely can. By connecting the games sites on the same acc. Overwatch for example with blizzard you gonna onto ur ps acc on blizzard then connect it with switch
