Gorgon

From Greek literature, the term commonly refers to a woman who had hair made of living, venomous snakes, as well as a horrifying visage that turned those who beheld her to stone. The most widely known Gorgon, is Medusa.

Gorgon's would win, this is just my opinion but assuming the fight is taking place with no knowledge on either species between both Gorgon and Phoenix. The bird wouldn't know about looking at the Gorgon, at the end if the day the Gorgon can and will turn the Phoenix to stone. Because the Phoenix is being turned to stone and not dying the Phoenix won't beable to resurrect itself, due to it being petrified over killed. Not to mention the snakes in the Gorgon's hair can also extend and cause a problem for the Phoenix should it get to close or try to escape. Also it should be noted that Phoenix's cannot control and manipulate fire, while it is true that the bright light from the flames the Phoenix produces would, take away the element of surprise from the Gorgon, it wouldn't actually blind them. Even if it does, in Greek mythos it has been said Gorgon hunt their prey as snake's do. Meaning the Gorgon can "see" her surrounding via scent with her tongue. Or track the heat from the Phoenix, the snakes in the Gorgon's hair are also independent of her, and can defend her on their own will. This is all from what I read in books, on Greek mythos so take it how you will.

Its true that the Gorgons are incredibly powerful and that against most foes they would win, but the problem with fighting a Phoenix is that the birds create fire around their bodies as a form of protection and due to the Gorgons preferring dark abodes to lurk in wait for their prey, the Phoenix's fire would blind them amd cause them to cripple their own power by closing their eyes, thus giving the Phoenix more then enough time to dispatch her, I saw her as, I'm sure you're aware, all three Gorgons were female
